At-Sunrice Global Chef Academy celebrates its first decade with a new campus in MacPherson. The fifth-storey space in the premises of the Sakae Sushi building is 42,000 sq ft in size, has six- to ten-metre-high ceilings to accommodate all its exhaust systems, dark wood flooring (some with Styrofoam underneath to absorb the heat and impact of walking), and a mixture of square and porthole windows to re-create a real working environment.
Apart from a pastry kitchen, hot kitchen and electric- and gas-stove kitchens – the latter two sit side by side – the school also has a Delicatessen Room with fresh charcuterie as samples. There’s also an Innovation Centre sponsored by Miele that can easily be transformed into 50 kitchen settings; a Wine Academy with old-world wine artefacts; a Coffee and Tea Academy by Nespresso; a computer room; and a training restaurant. What do we like most? Its Asian and Western features and fixtures are equally prominent.
