Sangria done 14 ways

Where to get: Serenity Spanish Bar & Restaurant
Serenity has Spain’s beloved punch drink all covered. Choose from an impressive six red-wine sangrias, such as the Pink Panther ($16) – raspberry schnapps, mixed berries, mint, tonic – and eight white-wine versions, including a Cucumber Sangria ($16) with vodka, lime and cucumber juice. Arabian Dream

Cost: $18++
Where to get: Pasha
The decadent Arabian Dream at this Moroccan-themed rooftop bar consists of vodka, fresh apple juice, champagne, honey and grenadine, with an unexpected twist of black pepper: one of those maximalist cocktails that somehow just works. 64 Aliwal St (6723 7117). Nicoll Highway. Daily 5pm-late.

Glühwein Swing

Cost: $24
Where to get: Tippling Club
Though the pricey champagne cocktail F**k the Subprime is no longer on the Tippling Club menu, the Glühwein Swing is – a take on the classic Solera Swing, this one has blended fortified wines, winter-spiced orchard syrup and citrus. Another unlikely combo from these madcap mixologists that somehow works. 8D Dempsey Rd (6475 2217). Take a taxi. Mon-Fri 6pm-late, Sat noon-3pm, 6pm-late.

Sangrial

Cost: $20
Where to get: Néktar
Tucked into a lush jungle nook next to sprawling high-rises, Néktar is all about alchemical cocktails. We like the Sangrial – Japanese malt whisky, aromatic nutmeg and cinnamon, served over crushed ice and sweetened by a generous drizzle of Spanish port. Free popcorn is a bonus. 31 Scotts Rd (6836 9185). MRT: Newton. Mon-Fri 5pm-1am, Sat 5pm-2am.

Ginger Bellini

Cost: $24
Where to get: Bar Stories & Café Fables
Nestled amid the Mediterranean cafés, fashion boutiques and hookah lounges on vibrant Haji Lane, this sleek Scandinavian furniture store turns into a hip, Mad Men-esque cocktail bar by night. There’s no menu, but the bartender will surprise you with a concoction composed just for you. Sparkling wine cocktails are popular here, and the waiter is happy to suggest his favourite, such as a refreshingly tart Ginger Bellini. 55 Haji Ln (6298 0838). MRT: Bugis. Daily 3pm-1am.
