Before he moved to Privé, New York-import Wayne Nish was brought in to revitalise the Screening Room and his bold, overhauled menu is wonderfully done. The mixed platters of sashimi and sushi are a delightful rainbow with salmon cured with coriander or kanpachi hit with citrus. Mains tend to lean towards seafood (we loved the slabs of tuna nestling on mesclun, roast peppers and beans) but the fat chunks of lamb rack coated with coriander seeds and tamarind are textbook-perfect. Unusually, Nish has curated a section of raw milk cheeses, which is reason enough for a return visit.
