This institution’s new home on the 39th floor offers a dizzying, panoramic view of Orchard Road and beyond, which is just as well since the actual decor is depressingly drab and the piped lounge music is awful. The menu is a mix of western burgers and hawker standards (at hotel-adjusted prices), though most people come here really for the Hainanese chicken rice. The latter is marked by marvellously oiled rice and softly poached chicken paired with the classic trio of dark soy, garlic-infused chilli and grated ginger dips. Particularly good is the seafood char kway teow, here presented with a wok-seared flavour and the lovely undertow of pork fat.
