Derived from a native Red Indian language, the name means ‘the first break of sunrise’; accordingly, its small menu combines traditional American dishes with trendy ingredients and several touches of molecular gastronomy. The ‘Surf & Turf’ is USDA beef and a Florida lobster with butter on brioche; only free-range chicken is used in dishes such as the fried chicken and waffle.
