Bringing the haute cuisine practice of cooking with seasonal ingredients to a casual format, Seasons Bistro at Triple One Somerset applies an American lens to their sustainably sourced and period-specific produce. Working with the knowledge he amassed on travels to various parts of the US, executive chef Benjamin Fong’s signatures include beef gravy and cheese curd poutine ($10), surf & turf gumbo ($27) of chorizo, shrimps and chicken, and fortifying brunch plates like maple-sweetened french toast ($15) and eggs and lox ($15). In keeping with its States-led theme, the restaurant stays open later than its mall neighbours, sating the Orchard Road ambler’s thirst with cocktails ($45/1.5-litres, $18/glass) and born-in-the-USA craft beers ($14-$18).
