For a couple of years, the Tung Lok group lay low in Singapore, concentrating on opening restaurants in China. The experience inspired them to recruit a cabal of chefs from Hunan province. Robust, fiery flavours dominate with a patina of well-water salt (rural China’s equivalent of sea salt). Try the prawns flash-fried with ginger and pretty lantern chillis; garlicky, spicy cuttle-fish rings; and crisp bean curd skins sandwiched between paper thin pancakes.
