Tucked away in a shophouse smack in Singapore’s alternative precinct, newcomer Dim Joy promises much in the novelty department, but the differences are largely cosmetic. Hong Kong chef Feng Song Tang’s 15 years of experience show in his standards – his roe-topped siew mai has just the right texture and juiciness, while the century egg porridge is satisfyingly smooth and fairly bursting with flavour. Slightly dry barbecued pork somewhat marred the chee cheong fun and char siew pow; but the custard bun’s rich sweet-salty goodness and Feng’s own durian snow pearl, where he displays a remarkable mastery of the fruit’s pungency, were perfect endings. The open-concept kitchen, airy and naturally lit dining area and non-intrusive bossa nova/jazz score add just the right twist to an otherwise traditional experience. Service is brisk and attentive.
