Both the menu and presentation of dishes owe much to Tung Lok but if this is a fault, it’s one shared by most good Chinese restaurants in town. And after all these years, the kitchen is still at the top of its game. Tiles of crackling pork were followed by a dainty square of charred tofu drenched in a lightly salted egg-white based sauce on a pile of wilted spinach. Fat juicy prawns, coated in a creamy wasabi paste, were faultless, while vegetarians will adore the faux goose meat made of dried tofu skin.
