Is it a reassuring sign wheneven hawker stalls are starting to go ‘natural’ on us? The Chicken Rice Company in bustling Lau Pa Sat, for example, uses chicken that’s reared in a climate-controlled environment and free of growth hormones.The pieces are tender and sweet, though the portions are a little meagre. The side dishes, which are served with a fragrant ginger and garlic dip, are excellent and include bean sprouts smothered in egg floss and a generous serving of golden, deep-fried tofu.
