Word on the street – mostly created by chef Tonny Chan’s plugs on Channel 8 cooking shows – is that you must pay a visit to this former chef of Sha Tin (Geylang Lorong 3) at his new digs in Joo Chiat. The two-storey shophouse space is now home to the Cantonese cuisine cook’s famed Crouching Tiger, Hidden Dragon creation – lobster, scallop and egg whites whisked into a mousse, and served in fried wan ton skin with pieces of seafood. If you’re not one for trying dishes with tacky names, his crab congee and cold crabs have been receiving rave reviews, too.
