The folks at Shots, a café along Ann Siang Hill, have wafted upwards into fine dining: their second storey is now a light-blue mosaictiled space in which chef Tony Seah serves European (mostly French and Italian) dishes with touches of whimsy. Behind the flowy white curtains of this undersea-themed sitting room and the eight-seat private room, dishes like jello made with an energy drink, pan-seared figs stuffed with foie gras, and zucchini pasta and a port wine shooter are savoured. Set menus change once every one or two weeks, and regular wine-, even water-, pairing dinners are likely to be held.
