Star cake: Chocolate Banana
Mashed bananas are laid between three layers of moist chocolate cake that resemble a mix of chiffon and sponge before the cake is smoothed over with dark chocolate fudge. The Pisang Raja (‘Banana King’) is used for its enduring fragrance and sweetness, and the cake is made from scratch. Ironically, there is a certain roundness to this strikingly square-shaped cheesecake. This is more than just a tower of cream puffs piled onto a cake. Fresh pastry cream (chocolate, strawberry, mango or earl grey) is piped into brightly coloured profiteroles. French bittersweet chocolate, chocolate mousse and chocolate sponge cake all form layers atop the crispy chocolate biscuit bottom. The combo of textures ensures that every bite has an interesting mixture of smoothness and crunch. ‘Truffs’ refers to the gigantic truffles that roll out of this walk-up chocolatier’s kitchen, but the name shouldn’t preclude you from trying its classic dark chocolate cake: two layers of medium-dense, feather-like chocolate sponge sandwiched with a thick layer of ganache.
