Let the city’s top pastry chefs do the dirty work: rock up to your next party with a flour-free nose and a sweet sensation to hand. Celine Asril enjoys five fabulous baker buys
Star cake: Chocolate Banana
Mashed bananas are laid between three layers of moist chocolate cake that resemble a mix of chiffon and sponge before the cake is smoothed over with dark chocolate fudge. The Pisang Raja (‘Banana King’) is used for its enduring fragrance and sweetness, and the cake is made from scratch. Six locations including #01-16 Republic Plaza, 9 Raffles Pl (6535 6593, www.awfullychocolate.com). MRT: Raffles Place. From $28.20 (0.5kg). Order at least three days in advance.
Star cake: Mango Passion Cheesecake
Ironically, there is a certain roundness to this strikingly square-shaped cheesecake. We reckon the fruit is the standout note – the slight sweetness and prominent yet comfortable sourness are balanced well by the heady fragrance of the mango and passionfruit. 452 Joo Chiat Rd (6348 9791, www.obolo.com.sg). Buses: 10, 12, 14, 16, 20, 32. From $30. Order at least five days in advance.
Star cake: Croquembouche (with cake base)
This is more than just a tower of cream puffs piled onto a cake. Fresh pastry cream (chocolate, strawberry, mango or earl grey) is piped into brightly coloured profiteroles. For the base, choose from a delicate Earl Grey-infused chocolate, the smooth chocolate fudge cake, or – our favourite – the rich, moist brownie. 18 Ann Siang Rd (6220 5565, www.thepatissier.com). MRT: Chinatown; 4 Mohamed Sultan Rd (6737 3369). MRT: Clarke Quay. From $156 (1kg). Order at least ten days in advance.
Star cake: Guanaja
French bittersweet chocolate, chocolate mousse and chocolate sponge cake all form layers atop the crispy chocolate biscuit bottom. The combo of textures ensures that every bite has an interesting mixture of smoothness and crunch. Four locations including #B2 07-9/2 Ngee Ann City, Takashimaya, 391 Orchard Rd (6887 4579, www.pokkafood.com.sg/gauche). MRT: Orchard. From $32 (0.78kg). Order at least three days in advance.
Star cake: Chocolate Cake
‘Truffs’ refers to the gigantic truffles that roll out of this walk-up chocolatier’s kitchen, but the name shouldn’t preclude you from trying its classic dark chocolate cake: two layers of medium-dense, feather-like chocolate sponge sandwiched with a thick layer of ganache. The cake is then cloaked with another layer of ganache and masked with a glaze. 179A Telok Ayer St (9088 2736, www.truffs.com.sg). MRT: Raffles Place. From $70 (1kg). Order at least three days in advance.
