Flam’s – the top Flammeküche (tarte flambée, or ‘flame cake’, pronounced ‘flahmmuh-koosh-uh’) specialist from France – opens its first local store with a menu of different options of toppings to cover the thin Alsatian dough crust. Try a layer of French cream cheese and spices topped with fillings like beech-smoked bacon, onions, French camembert and emmental cheese ($12.90-$19). Expect quick service in this casual French setting as the pies are baked in a special oven in less than three minutes at 360°C, and served hot on traditional wooden cutting boards. Perpetuating Alsatian tradition, the All Flam’s special is good for sharing; there are also salads, Alsatian pasta and traditional French desserts on the menu
