Yet another acclaimed chef drops in, and he’s become one half of a power couple: Michelin-starred Lauren Peugeot (owner of top French restaurant Le Charlemagne) has teamed up with Tetsuya Yoshida (Tetsu) to offer traditional and modern French-Japanese dishes in their new collaboration with Food Junction. Helmed by chef de cuisine Franck Pelux (also from Le Charlemagne), the 74-seater in the former Tetsu space is delineated by grey and white tones around a Perspex/bamboo centrepiece. The decor highlights the multi-sensory theme of the dishes: the tartare de dorade royale ($28) is a starter of royal bream, sake, mirin and egg cooked at 68°C; the Japanese Wagyu (AAA) main comes with a millefeuille of eringi mushrooms and Aomori black garlic ($44).
