Okonomiyaki is the Japanese answer to murtabaks, but so much prettier. The foundation is eggs, usually two to three per serving. Wafer-thin omelettes wrap around everything from prawns, pork, mochi rice and cheese to soba, clams and cabbage – and sometimes all of those combined. Everything is cooked on sizzling skillets (the choreographed activity behind the glass-fronted kitchen is engrossing), doused with soy, sweet sauces or tomato paste, and then layered with a thick coating of striated mayonnaise before arriving at the table looking like a marzipan torte. Desserts include the gorgeous, marshmallowy greentea mochi and thick red-bean soup.
