After leaving the great Fig Leaf (now closed), Anderson Ho went to work at Singapore Airlines, of all places. He recently roared back on to the dining scene with Le Papillon. The minimalist decor is clean and bright, and Ho’s touch bold and assured. The seasonal menu includes blocks of chilled watermelon topped with dollops of creamy Meredith goat’s cheese, pesto and pine nuts; and a divine pan-fried filo parcel of braised oxtail and sautéed mushrooms.
